
These are a weeknight favorite for busy families! Kids love them, they're crispy, juicy, reasonably healthy & so easy to prepare.
INGREDIENTS:
1/4 cup flour
2 tbsp Dijon mustard
1lb boneless skinless chicken breasts
salt and pepper
2 tbsp olive oil
DIRECTIONS:
1. Slice your chicken breasts into 1 inch strips. Season with salt and pepper. Add oil to a frying pan and heat over medium-high.
2. Coat all sides of each chicken slice with Dijon mustard. Dip in flour and shake off excess.
3. Carefully add to hot oil, and cook until golden brown and cooked through (about 3-4 minutes on each side)
